Biscuits are one of my very favorite things in life. I’m not partial to any particular “type” of biscuit – buttermilk, drop biscuit, angel biscuit… you name it, I like it. At this point, I think I’ve tried biscuits in nearly every major Southern city and dozens more in the South’s back road towns. I’ve also played with dozens of recipes at home. I rarely meet a biscuit I don’t like. Quite simply, they are an easy-to-bake delicacy, and with any meal, or all alone, the lowly biscuit satisfies.
And yet, I do have a favorite. After extensive research, I’ve settled – for now – the biscuits at Greenhouse on Porter in Downtown Ocean Springs, Mississippi top my list. Their biscuits are of the good ole’ buttermilk variety and often served there infused with other ingredients. Always made from scratch everyday.
Much thought and care goes into their menu, doing their part to spread love and happiness to their patrons from along the Mississippi Gulf Coast and well beyond.
Our friends at the Greenhouse on Porter have graciously shared their biscuit recipe with us, and we would like to share it you. We might not be able to bring happiness to all, but we can relay the perfect biscuit recipe, and well, that’s kind of the same thing.
Greenhouse on Porter Biscuit Recipe
- 2 cups all purpose flour
- 1 tbsp baking powder
- ¾ tsp salt
- ½ tsp black pepper
- 1 stick cold butter
- 1 cup full fat buttermilk
- Preheat oven to 425 degrees.
- In a large bowl, mix flour, baking powder, salt & pepper.
- Chop cold stick of butter into half inch cubes. Using your fingers, squish the butter into the flour mixture until the largest pieces are about the size of peas.
- Stir in the buttermilk, mixing only until the dough comes together, careful to not overwork the biscuit dough.
- Dump the dough onto a floured surface and roughly shape into a square about an inch thick. Cut into 9 pieces.
- Place biscuits on a parchment lined pan and bake about 10 minutes, or until golden brown.
Serve with any topping you can dream up!
… Sigh … Alas, to get their world-famous “fluff” condiment, you’ll have to visit their coffeeshop, because while they happily shared their biscuit recipe – the fluff recipe remains elusive!
