Last spring, Pastry Chef Dwayne Ingraham nearly won the Food Network’s Spring Baking Championship. Born to a family of cooks in Louisiana, cooking is in Dwayne’s blood – and it’s apparent the second you meet him. His culinary career has taken him from culinary school in New England to Sarasota, Florida to Las Vegas and back closer to his roots in Oxford, Mississippi where, after a stint as corporate pastry chef for City Grocery Restaurant Group, he’s opened his own bakery, Sinfully Southern in Oxford.
Ingraham can make the simplest of ingredients sing like Adele. Sweet. Powerful. Lingering.
This quick and easy blender recipe is a classic example of that epic simplicity: a blackberry coulis perfect over cheesecake or ice cream or a custard or crème anglaise. Or anything really.
Blackberry coulis will become the “make-ahead” secret weapon in your dessert arsenal. Plus, blackberries pack a hearty dose of antioxidants and scream “Southern” like nothing else really can. So, it’s good for body and soul.
Recipe: Easy Blackberry Coulis
- 2 cups fresh or frozen blackberries
- 1 cup cane sugar
- 1 lemon, zested & juiced
- Place all ingredients into a saucepan and cook on medium to low heat until sugar is completely dissolved and the fruit mixture has come to a boil.
- Remove from heat and pour into the blender. Purée until smooth.
- Cool and store for use in refrigerator.
