Recipe 4 of 5 in our Mississippi Blue Rice recipe series is from our Gulf Coast foodie friend, Julian Brunt. Julian is a food and travel writer and was quickly impressed with Mississippi Middlins Rice Grits! He made this delicious & easy side dish and shared with us, so we thought we’d share with all of you!
Mississippi Blue Rice Grits with Wild Mushrooms
- 1 cup Original Mississippi Middlins White Rice Grits
- 2 cups chicken stock
- 1/2 cup wild mushrooms, chopped
- Freshly grated Parmesan
- Sauté mushrooms in oil until just tender, combine grits and stock and simmer for 20 minutes.
- Add Parmesan, stir and serve at once.
